Enter this the realm of plant and fungi-based knowledge to explore the queer ecology of microbes, engage in discussions on how to reduce food waste, incorporate food medicine, make kin, and decolonise our food-ways, as well as, take home new skills and ferments to steward and share.

 

Who is this course for?

This course is for anyone interested in the world of microbial transformation, how to preserve food and how to incorporate ferments into daily life.

 

What will you learn?

On this course you will meet some of our bacteria and fungi friends and learn:

  • How to preserve and transform fresh vegetables

  • How ferments play a role in a healthy gut biome and nutrition

  • The science behind fermentation

  • The diverse cultural practices and lifeways that inform contemporary fermentation — to give you a foundation rooted in historical, cultural, and practical methods.

  • You will also explore fermentation as a tradition that can inform our experience with place and community, including approaches to mutual aid, developing relationship-based land practices, and a variety of ways to incorporate more ferments into your life and community.

 

How is the course structured?

In addition to fermenting ideas, you'll be getting some hands-on experience; making ferments, exploring flavours, and even playing with wild yeasts to understand the inner workings of fizzy drinks and mocktails. You'll be taking home ferments and cultures to tend to and enjoy, along with your new wealth of knowledge.

Part of the nature of fermentation is embracing the diverse communities necessary to create transformational change, and we trust you'll embody that with us by spending this time forging new connections with your human - and more-than-human - kin. It's through these commons that we can tap into ancestral, relationship-based knowledge and create new futures through the material cultures and the foods we share.
